Having someone with marginal hearing loss is not the same risk as a life threatening allergy that requires an Epi-pen. You need to follow the appeal process but be prepared for a denial.
RESO is the officer entry plan, you'd be an officer right away.
If you want to be a NCM, be prepared to spend 5 years as a NCM as it's not a super easy switch over.
If you want to be a RegF officer I highly recommend you just go that route. You can be a good leader and learn the job the NCMs...
If your goal is the RegF, then call the recruiting center and see if ROTP will let you join mid degree, remain at your school while paying for your tuition and train during the summer.

Did you call the university and see if they can extend the deadline for your offer acceptance as you're waiting clarity from the CAF? They may work with you on it.
